Easy Meal Prep: DIY Chipotle Rice Bowls
Healthy, simple & budget friendly lunch idea 🥑
Start by preparing a base of brown rice, layer on a variety of beans (like black and kidney beans), add a protein of choice (I prefer chicken) and load up on your toppings!
Each time I meal-prep these bowls, the toppings vary based on what I have at home or what looks good at the grocery store but usually tomato, onion (red or white), corn and guacamole. 

Depending on your schedule, it’s convenient to do this on a sunday (while listening to a podcast to make it more fun) and then you’re set for the whole week!

Not only are these bowls healthy and actually satisfying, but these portable containers are also perfect for on-the-go - whether you're headed to the office, a picnic, a long drive or just about anywhere else.

I can make 8-10 meals for under $35 of ingredients so this is also super budget friendly! Delicious anytime of day.
We recently hosted our neighbors from South Africa who have never been to Chipotle so we had to give them our best effort. Even though it wasn’t identical, they loved it. So these bowls are also easy for big groups because everyone can add toppings to suit their own preferences. It’s also fun and interactive. For example, I had them help with the guacamole and grinding salt & pepper.
