Easy Meal Prep: DIY Chipotle Rice Bowls

Healthy, simple & budget friendly lunch idea 🥑

Start by preparing a base of brown rice, layer on a variety of beans (like black and kidney beans), add a protein of choice (I prefer tofu or chicken) and load up on your toppings!

Each time i meal-prep these bowls, the toppings vary based on what I have at home or what looks good at the grocery store but usually tomato, onion (red or white), corn and guacamole. 


Depending on your schedule, it’s convenient to do this on a sunday (while listening to a podcast to make it more fun) and then you’re set for the whole week!


Not only are these bowls healthy and actually satisfying, but these portable containers are also perfect for on-the-go - whether you're headed to the office, a picnic, a long drive or just about anywhere else.
