Chicken Teriyaki Poke Bowls
I was craving a good poke bowl, but the place right by our house uses a deep-fryer on the chicken (which totally defeats the point of healthy vibrant poke bowl IMO)… so I took matters into my own hands!
The best part is that a lot of these toppings can be prepped in advance so the actual cook time is just grilling the chicken breast and adding everything to a plate.
I didn’t follow a recipe. I just thought of toppings that would be colorful and complementary to each other.
Ingredients Needed:
Poke rice
Chicken breast
Pickled onions
Edamame
Purple cabbage
Shredded carrot
Cucumber
Pineapple
Teriyaki sauce
Optional Toppings:
Soy sauce
Crispy fried onions
Sesame seeds
I made it again, but with a few adjustments based off what we had in the fridge. I did mango instead of pineapple, added cashews, and didn’t have any purple cabbage. I personally thought the sweetness of the pineapple complemented the flavors much better than the mango. The cashews were nice for a crunchy texture so I’d keep those. I also think the purple cabbage adds a nice crunch too so I’ll add it next time too.
