Healthy and Simple Vegetarian Breakfast Ideas

Breakfast is currently my favorite meal to prepare because I love mornings. I have a huge east facing window so the sunlight just pours into my kitchen in the morning. It’s honestly so magical and fills me with so much gratitude everyday.

I think its super therapeutic to put together a yummy breakfast.

I was plant based (then vegetarian) for many years so all of these are vegetarian friendly. I recently started to slowly incorporate dairy, eggs, meat and fish so I can do another post soon with more protein focused breakfast ideas for meat eaters.
