Autumn Eats (Made By Clay)
Clay has always been very thoughtful in the kitchen. As a personal trainer, he highly values nutrition and fueling his body. I have always ate pretty healthy but I was vegetarian for a long time and don’t love to cook as much as he does. Now that I’m pregnant, he has really taken it upon himself to ensure me and baby are well fed! It’s truly made me fall more in love with him because he’s so intentional and loving about it.
Here’s a few pretty plates from the last week or so! I am way better about taking photos in the morning with good lighting but this is making me realize I haven’t documented a lot of the gorgeous dinners he’s made because it’s already dark outside and the photos don’t do justice. For example, last week he also made a salmon salad, homemade baked mac and cheese, Thai chicken lettuce wraps, and a beautiful beet salad.
Ingredients: sweet potatoes (roasted with olive oil in the oven first), grilled chicken breast, eggs, spinach and tomato. Topped with salt and pepper.
Ingredients: elbow noodles cooked with philadelphia cream cheese and mozzarella, garlic, spinach and steak bites.
Ingredients: spinach, shrimp, walnuts, pumpkin seeds, dates, and homemade carrot ginger dressing.
Ingredients: ground turkey, eggs, spinach, and red peppers. Topped with salt and pepper.
Ingredients: sweet potatoes (roasted with olive oil in the oven first), broccoli, red pepper and steak bites.
